THIS WEEK'S MENU-- 2/1-2/7

Another week of delicious, healthy meals for my family and yours!  If this isn't the perfect menu for you, tweak it a little.  For example, the Sweeneys are staying away from gluten and a few of these menu items have buns. Even though I love buns (especially my husbands ;) ), we are going bun-free.  If you are doing Arbonne's 30 Days to Healthy Living, you can still use these recipes with those kinds of little tweaks.  Super easy!  {If you are interested in learning a little more about our 30 Day Detox program, send message me on FB!}

We are running low on lunch box food so I have to make sure I focus on that within my grocery list this week.

Monday: Monday night is a busy one for us.  My kids have extracurriulars and so food has to be fast and easy.  Tonight we are eating GREEK NACHOS.  Soooo yummy!  http://notwithoutsalt.com/greek-nachos/   It's ground beef (or lamb), chopped tomatoes and cucumbers, feta, and Greek yogurt sauce.  I add dill, lemon juice, salt, and pepper to plain Greek yogurt to make the sauce.  Use store bought pita chips our you can make your own. If you aren't into that idea at all, serve it over salad greens.


Tuesday:  CHICKEN AVOCADO SOUP.  Mmmmm... Love this because it's warm but still not a heavy meal.  I'm serving it with a nice salad on the side.  I'm using bone broth instead of chicken broth for it's health benefits.  More on that later!  http://www.cookingclassy.com/2014/07/chicken-avocado-lime-soup/

Thursday:  BLACK BEAN BURGERS WITH GUAC ON TOP AND CHIPS WITH SALSA.  I love love LOVE Pioneer Woman anything. She is such an amazing woman!  I've never had her black bean burgers, but I'm positive they are going to rock.  http://thepioneerwoman.com/cooking/black-bean-burger/  To make it extra yummy, I'm topping mine with guacomole or sliced avacados. You can buy yummy already-made guac at the grocery store if you can't find ripe avacados.  I might even make my own chipotle salsa which is out of this world!  I use this basic recipe and add a little chipotle chili powder and cumin to give some smokey flavor. http://allrecipes.com/recipe/16259/ds-famous-salsa/photos/866636/



Friday:  SOUTHWESTERN EGGROLLS WITH LEFTOVER SALSA AND GUAC. I love me some Southwestern eggrolls!  At first glance, they seem hard to make but they are so easy!  My kids love to help me and love to eat them!  We use the store bought wonton wrappers for these.  http://www.tasteandtellblog.com/southwestern-egg-rolls/
